Not just a bunch of vegetables!


Asian Stir-Fry


This is another go to meal! When you have tons of vegetables and want something simple, make a stir fry! Narayana (my boyfriend) and I love to make a stir fry any night of the week! Another way to step up your game and really get the most out of your meal is to buy fresh, best if local, organic vegetables. This is one of my favorite and easiest dinners.


Ingredients:

1 Tbsp. coconut or safflower oil
1 1/2 tsp. toasted sesame oil
2 cloves of garlic
1 Tbsp. grated fresh ginger
1 carrot, cut in large chunks
1/2 cup broccoli florets
1/4 cup red bell pepper chunks
1 zucchini chopped
1 small head of bok choy, chopped
1 Tbsp. Braggs Liquid Aminos
(optional) 1/2 cup of couscous or quinoa


What to do:

In a large wok or pan, heat oils on high. Add garlic, ginger, and carrots (carrots take the longest to soften up). Cook, stirring well, for 1 minute. Add broccoli, stir, and cook 5 minutes. Add remaining veggies. Reduce heat to medium and cook until done. Turn off heat; add Bragg Liquid Aminos. Stir well. Serves 1.

I personally love to have my vegetables "half cooked" because that way they retain more of the vitamins and nutrients. Don't cook the life out of vegetables to the point that they are soggy, lifeless, and no color.
